Squash Spaghetti

Hello gardeners, 


Experiencing a mass production of summer squash? The squash family is so fun to grow because of their quick and easy production but the amount of fruit can be overwhelming. This is a wonderful recipe to help get rid of this amazing squash. 


Ingredients:


  • 12 ounces of spaghetti

  • 1 large yellow summer squash

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 4 cloves of minced garlic

  • ¾ cup of heavy cream

  • ¾ grated parmesan cheese

  • ¼ pasta water

  • Salt + pepper to taste

  • Parsley for topping


First, bring water to a boil, and cook spaghetti as directed on packaging. Next, chop squash into quarters and saute in olive oil until browned. Then, add butter and garlic, and add in cream. Stir in parmesan, add salt and pepper to taste and pasta water. Take off heat and finish with parsley and extra parmesan.
